Eggplant "Meatballs"Skinnytaste.com
Servings: 6 • Size: 4 meatballs • Old Points: 6 pts • Points+: 7 pts
Calories: 259 • Fat: 12 g • Protein: 9 g • Carb: 30 g • Fiber: 6 g • Sugar: 7 g

Ingredients:
  • cooking spray
  • 1/2 tbsp olive oil
  • 1 1/4 lbs unpeeled eggplant, cut into 1-inch pieces
  • kosher salt
  • 1/4 tsp black pepper
  • 2 garlic cloves, crushed
  • 2 tbsp chopped basil, plus leaves for garnish
  • 1 1/2 cups Italian seasoned breadcrumbs 
  • 1 large egg, beaten
  • 2 ounces Pecorino Romano cheese, freshly grated, plus more for serving
  • 1 tablespoon chopped flat-leaf parsley
  • 1 (25.25 ounce jar) DeLallo Pomodoro sauce
  • part skim ricotta cheese, for serving (optional)

Directions:

Heat the oven to 375°F. Spray a large rimmed baking sheet with cooking spray.

Place 1/2 tablespoon olive oil in a large nonstick skillet over medium high heat. When hot add the eggplant and 1/4 cup water. Season with salt and pepper to taste and cook, stirring occasionally until tender, 10 to 12 minutes. Transfer to the bowl of a food processor and pulse a few times.

Happy hour with a good friend is always a good time. I know I did a post on this place before... but here are some new things We tried and loved!!!!

Seared Sea Scallops- With Jumbo sea scallops, potato puree, brown butter, and mache - 14$

Seared scallops are hard to find executed well, and when I mean well I mean well. This was sooooo delicious I honestly wanted to order another one to go home even though I was full from the other things we ate... Ugh what an amazing start to our happy hour!!





The sauteed kale was really good. Really green as pictured here, I would have liked a little pepper on it though. Other then that it was good.





The Spinach was eaten the most amongst the both of us. We loved the garlic flavor, and it was not too wilted so you got that fresh spinach flavor.. Yummerzz



The gnocchi... I was so mad at my self for not READING the ingredients in this dish. As a new pescatarianism, I omit meat from my diet but am eating seafood. It tasted so good that I was mad and couldn't believe it was pork I had... I stopped eating it and my friend finished it. Had it not tasted so good, I'd still ask the waiter what was in it... Oh well It was good but not for my new diet....





The calamari. Although different for my friend this way, I prefer calamari grilled and whole like this. It give a different mouth feel to this classic appetizer. I loved the pepper aoli and the stuffed pepper inside. I'd get this again, so would she.


All in all, I always like returning to good spots, and this place did not falter. I really do recommend this place. Psss FYI the drinks were strong and reasonably priced. Only thing is that they open at 5pm...

I would def come back for lunch, dinner, when I'm bored, Oh yea If you have a crossroads card even better! They take 10 Percent off your entire bill. For a table of 8 We ended up paying on $22 each with tax and tip included. And boy it was a lot of food. I love family style resturaunt. I love the concept of sharing food at the table. But when I .und out about!!! this place, I was excited. It was way better tasting than Carmines by Far!!!

Here we have the Chicken Parmesan. Oh My good Was it good. To cook it so perfectly in this size takes skill. I was Floored by the sauce to chicken to cheese ratio. We had two orders of this! A def thing to try here.

 

 Here we have the Mushroom braised Sirloin dish. Oh my god was this really food. It was a special that day. I normally don't eat a lot of beef in one day but I went back for more, and more, and more. We had one order of this and it was plenty .


A side of Spinach with Garlic never hurt no body!. I loved the toasted flavor of the garlic and the fresh not weltered taste of the spinach. They had me at Hello!!! 



This was the Friday special. Black linguini with seafood! Salmons, clams, muscles , calamari, oh the works ! we had two orders of this beauty!
