Eggplant "Meatballs"Skinnytaste.com

Ingredients:
  • cooking spray
  • 1/2 tbsp olive oil
  • 1 1/4 lbs unpeeled eggplant, cut into 1-inch pieces
  • kosher salt
  • 1/4 tsp black pepper
  • 2 garlic cloves, crushed
  • 2 tbsp chopped basil, plus leaves for garnish
  • 1 1/2 cups Italian seasoned breadcrumbs 
  • 1 large egg, beaten
  • 2 ounces Pecorino Romano cheese, freshly grated, plus more for serving
  • 1 tablespoon chopped flat-leaf parsley
  • 1 (25.25 ounce jar) DeLallo Pomodoro sauce
  • part skim ricotta cheese, for serving (optional)

Directions:

Heat the oven to 375°F. Spray a large rimmed baking sheet with cooking spray.

Place 1/2 tablespoon olive oil in a large nonstick skillet over medium high heat. When hot add the eggplant and 1/4 cup water. Season with salt and pepper to taste and cook, stirring occasionally until tender, 10 to 12 minutes. Transfer to the bowl of a food processor and pulse a few times.

First off I'd like to say that this is indeed the cheapest lunch I ever had and really enjoyed it as well!!



Lunch comes with app, entree and drink who can beat that and it's all for a measly 7.99!!!

Here is there take on spring rolls and a little salad on the side! yummerzz



My thai Ice tea did not disappoint at all!

The start is the entree... I had their coconut rice with veggie panang... OMG that is was bananas I almost ordered another to go home oh man. What really intrigued me was the rice.... it was the best part yum yum yum 


This is a nice hidden gem in times square. I highly suggest going here for lunch or happy hour!

What a great way to end a weekend our in the Berkshires. 


For "brunch" I had this 

MOULES FRITES
cream, fine herbs, white wine, shallots

The muscles were so delicious.  That creamy broth was out of this world. I would def recommend this if you travel out there any time soon. It came with a side of fries, but the scare amount of food on my Fiance's plate made me get some more!!

ROASTED TROUT
haricots verts, olives, capers, 
cherry tomatoes, lemon

I had a bite of this and thought it was a little bland... the fries helped carry more weight to the dish. If you combine all the items into one bite this is a great dish, or so I've heard... I rather eat my muscles...LOL

he wasn't too fond of it but ate it any way because we were hungry.


I would like to try this place for dinner next time I'm out there... maybe I will have another good dish, and My fiance will love his...
